Elsie Thomas

CHA Learning Faculty | FSNM Program

Elsie Thomas is a food and nutrition services professional with nearly 30 years of experience in Canadian acute care hospitals. Her career spans food service supervision, management, quality, staff education, and nutrition services across healthcare organizations in Ontario and Alberta.

Elsie has held food service roles with organizations including Toronto General Hospital, Sunnybrook Hospital, Oakville Trafalgar Hospital, Foothills Hospital, Rockyview General Hospital, and William Osler Hospital. She has also served as Food Service Manager for Milton District Hospital and Georgetown Hospital and currently works as a Quality Supervisor at Oakville Trafalgar Hospital.

Throughout her career, Elsie has developed extensive experience coaching, mentoring, and educating frontline food service staff. Her work has included supporting staff development, strengthening workplace practices, and providing education related to food service standards, including the International Dysphagia Diet Standardisation Initiative (IDDSI).

Elsie holds a Post-Graduate Diploma in Nutrition Management from George Brown College, a Post-Graduate Diploma in Nutrition and Dietetics from the University of Madras, and a degree in Nutrition and Home Economics from the University of Kerala. Her experience as an educator also includes teaching in the Food Service Worker Program at Centennial College.

As a faculty member, Elsie draws on her extensive healthcare food service and quality experience to help learners connect their studies with the practical realities of food and nutrition services in healthcare.
